The wine is pale straw gold in colour. The nose displays some lovely fresh fruit aromas with an overlay of brioche and honeysuckle. The palate is creamy yet fresh and crisp with some spicy herbal notes and a long flavoursome finish.

CUBITT RESERVE BLANC DE BLANCS 2013

Winemakers – John Worontschak and Matthieu Elzinga

Pale straw in colour the Cubitt Blanc de Blanc displays notes of green apple, citrus and white fruits on the nose with hints of vanilla and minerality. The palate has brioche and buttered toast overtones and is vibrant, fresh and creamy with a firm balanced acidity that requires no dosage.

Excellent Aperitif.

Matches: Shellfish, Oysters, Apple and Cinnamon pie.

Composition:
Hand-picked Chardonnay from the Hillside vineyard on Denbies’ Estate.

Vineyard:
The spring time and summer were warm, enabling the fruit to ripen fully, build-up interesting flavours and impart complexity to the resulting wine.

Winemaking:
Made from the very best of Denbies’ grapes. Gently whole berry pressing ensures the very best quality juice is extracted before a cool, slow fermentation. It was bottled in May 2014 following 6 months on lees and then 27 months on lees in bottle.

CUBITT RESERVE BLANC DE NOIRS 2013

Winemakers – John Worontschak and Matthieu Elzinga

Pale gold in colour, this full-bodied wine has a fine mousse and a creamy, rich texture. Complex aromas and flavours of baked pear and rose petal are and complemented by a hint of strawberry. The balance of strawberry fruit, minerals and crisp acidity lead to a round mouthfeel and lasting finish.

Excellent Aperitif.

Matches: Shellfish, Oysters, Apple and Cinnamon pie.

Composition:
Hand-picked Pinot noir from the Hillside vineyard on Denbies’ Estate.

Vineyard:
The spring time and summer were warm, enabling the fruit to ripen fully, build-up interesting flavours and impart complexity to the resulting wine.

Winemaking:
Whole bunches of the best Pinot Noir grown at Denbies were delicately pressed. This resulted in a premium juice that was carefully fermented at a low temperature to maintain the fruit’s premium character. Six months on lees, in tank, was followed by bottling in May 2014. It then went through secondary fermentation in the bottle and kept in the cellar, to mature, for a further 27 months.
