Monitoring weekly, I chose to leave the wine on skins until July 2026, before gently pressing, using only gravity to do so. \u003cbr\u003e\u003cbr\u003eI’ve made this wine without any of the usual winemaking additions, except diligence and care. Proudly unfined and unfiltered, it will show natural sediment in the bottle and, if you’re lucky, in the glass too. Best enjoyed slightly chilled, yet not cold, this is the truest and most honest of English wines. I hope you enjoy.
