Chef Josh and his team have shaped the summer menu around dishes that feel fresh, expressive and suited to dining above the vines. The focus is on ripe summer produce, carefully prepared local fish and meat, light sauces, fresh herbs, texture and colour. Each plate is designed to feel fresh, generous and full of flavour, with ingredients that work naturally alongside the wines being made here at Denbies.

Indulge in Summer 2026

Heritage tomatoes are lifted with Dijon and basil oil, burrata is balanced with fig and crispy capers, and smoked haddock is given freshness through cucumber, fennel and radish. There is richness, but it is kept in check by acidity, herbs and texture, giving the starters a clean, confident lift.

Main courses bring more depth, with lamb warmed by wild garlic and cumin, pancetta wrapped cod finished with cucumber beurre blanc, and sea bream taking on aromatic notes of saffron, orange, fennel and grape.

Desserts carry summer through to the final course, from rhubarb and lavender to quince, thyme honey, berries and olive oil chocolate crémeux. It is a menu made for long lunches, estate wine pairings and a view worth settling into.

Set on the third floor of the winery, The Gallery Restaurant is Denbies’ highest dining room, overlooking 265 acres of vines with sweeping views across to Box Hill and the North Downs. With Denbies award-winning English wine poured at the table, the view feels more than a backdrop. It connects the glass, the food and the place, creating a dining experience that feels completely rooted in the vineyard.
