Noble Harvest 2025
It does not happen every year. It cannot happen every. But last year it did. This wine is made from grape that needs very specific conditions prior to picking. Cool, misty and damp mornings followed by bright, warm afternoons provide a perfect environment for botrytis cinerea to work its magic and – in our case – on a specially designated block of Ortega in our southern part of the vineyard.
We carefully picked only the most suitable of individual berries and further scrutinised the fruit at the winery to ensure only the most perfect of grapes were selected. Pressing was slow to allow the most concentrated berries time to release their juice. This process happened every few days for a fortnight. Eventually we had a tank of juice that fermented at a low temperature for twenty days. From seeing the fruit in the vineyard we knew we were working with something special, but it was after a few days of fermentation that our senses became very excited about the potential of this wine.
Bottled in the early spring of 2026, this wine showcases the patience and skill of English winemaking. Serve slightly chilled and enjoy in a large, aroma-releasing glass. This wine pairs brilliantly with friends, or with salty cheeses and lightly spiced Asian dishes.’
